You can prepare this vegan BBQ tempeh coleslaw wrap in less than five minutes with easy make-ahead ingredients. It’s a perfect packable lunch!
If you are following my August Food Journal Challenge on Instagram, you probably noticed this tasty sandwich. I’ve been enjoying the leftovers from the photoshoot for this post. I especially appreciated it’s packable goodness on Sunday. My husband and daughter and I went for a thirty-mile bike ride on the Walkill Valley Rail Trail. I was glad to have a fortifying lunch along for the ride!
The wrap itself is a cinch to prepare. You just need a few ingredients on hand.
BBQ Sauce
I recommend using my homemade blender BBQ sauce recipe so you can avoid cane sugar.
Baked BBQ Tempeh
Once you have the BBQ sauce, the baked tempeh is super easy!
Veggie Coleslaw
The veggie coleslaw takes a little more effort - but it’s worth it! Check out the notes at the end of the recipe for some time-saving tips.
Vegan BBQ Tempeh Coleslaw Wrap
You can prepare the ingredients with the intention of making this vegan BBQ tempeh coleslaw wrap. Or you can make this delicious sandwich when you happen to have the ingredients left over. I’ve gone both ways! The sweet-spicy-sharp combination of flavors is delightful!
