There is so much to love about this Nacho Avocado Toast. Let me count the ways:
1. LOVE the creamy Plant-Based Nacho Cheese Sauce. I could kiss Kathy Hester at Healthy Slow Cooking for inspiring it.
2. LOVE the quick guacamole. It’s so easy to make!
3. LOVE the black bean & cilantro spread. Again, it’s so easy to make!
4. LOVE how the sweet crunch of corn combines with the other flavors.
5. LOVE that I finally found gluten-free bread my daughter likes!
Number 5 is a biggie. We had just about given up on gluten-free bread. A friend recently gave us a loaf of Three Bakers 7 Ancient Grains. To my surprise, my daughter proclaimed it to be “very good!”
Toasting Tip
If you have ever tried to maneuver a loaded piece of toast on and off the rack of a toaster oven, you know it can be tricky. Using a pizza screen makes it much easier. Simply place the bread on a pizza screen, load it up and then place the screen in the toaster oven. When toasting is complete, use an oven mitt to remove the screen from the oven and use a spatula to slide the toast onto a plate. Easy!
Nacho Avocado Toast
This Nacho Avocado Toast features ingredients I like to keep on hand. I usually have avocado and salsa in the fridge – so I can mix up the quick guacamole in minutes. Black beans are a staple in my pantry. I often make a black bean spread for sandwiches and wraps. The cheese sauce goes well with so many things – so that’s also easy to have around!
If you have these ingredients prepared ahead of time, you can make this tasty Nacho Avocado Toast in mere minutes. If not, all three are fairly quick and easy to make! You would just need to allow a little more prep time to enjoy this creamy “cheesy” delicious version of avocado toast.
Nacho Avocado Toast {GF & Vegan}
Ingredients
- 2-3 slices whole grain bread (I used GF Three Bakers 7 Ancient Grains)
- 2-4 Tbsp. Black bean and Cilantro Spread - see recipe.
- 2-4 Tbsp. Quick Guacamole - see recipe.
- ½ cup baby spinach or other dark leafy greens
- ¼ red onion small, chopped
- ¼ cup frozen sweet corn
- ¼ cup Plant-Based Nacho Cheese Sauce - see recipe.
- Taco sauce to taste, optional (I like the Chi Chi’s brand)
Instructions
- Place baby spinach and onion in a food processor fitted with the S blade and pulse to mince finely.
- Place frozen corn in a strainer and run water over it for about 30 to 60 seconds to thaw.
- Place bread slices on a pizza screen.
- Spread 1-2 tbsp. of black bean & cilantro spread on each slice of bread.
- Spread 1-2 tbsp. of quick guacamole over black bean spread.
- Sprinkle minced greens and onion on guacamole.
- Sprinkle thawed sweet corn on top.
- Place pizza screen in toaster oven and toast to desired level of crispiness. (I used darkness level 3 for 2 slices – about 3:45 minutes – on my Breville toaster oven.)
- If cheese sauce was made ahead of time and refrigerated, warm in microwave for about 30 seconds.
- Spoon cheese sauce over avocado toast and serve.
Notes
A pizza screen makes it MUCH easier to transfer this Nacho Avocado Toast in and out of the toaster oven! They are also great for making pizza!

I don't have a toaster oven, do you have a way to make it any other way? thank you!

Hi Sheetal - you could try toasting the bread in a regular toaster first and then add the toppings. It would be slightly different because the toppings wouldn't be warmed - but might still be tasty. Or you could try a regular oven at 375º or 400º - but heating up a large oven takes more time…

FYI- The 3 Bakers 7 Gtain Bread contains eggs and is therefore not vegan.

Hi Manon - yes, you're right. I was recommending it to folks like my daughter who have to avoid gluten but don't strictly follow a vegan lifestyle. Finding a decent gluten-free bread can be difficult. It's a bit easier to find a tasty vegan bread. 🙂
