Sweet Potato Pie Smoothie

You won’t believe how the taste of this sweet potato pie smoothie resembles its namesake! Yet it's made with just a few healthy plant-based ingredients!

Ingredients

  • cups plant milk I use fortified rice milk
  • 1 sweet potato small, baked, skin removed (I like to keep baked sweet potatoes on hand to quickly add to recipes like this)
  • 1 cup frozen broccoli florets
  • ½ Tbsp. chia seeds
  • 2 medjool dates pitted
  • ½ tsp. pumpkin pie spice

Instructions

  • Place ingredients in a high-speed blender in the order they are listed.
  • Begin blending on lowest setting and slowly turn up to highest setting.
  • Blend on high for approximately 30 seconds.
  • Serve immediately.
