I’m going to be honest. This Sweet Potato Pie Smoothie recipe is a last minute substitute. I was planning to share a gluten-free vegan peanut butter chocolate chip cookie recipe. However the cookie recipe still needs some tweaking. My daughter and I agree it isn’t “blog worthy.” (Sadly, that hasn’t stopped us from scarfing down the rejects!)
Once I realized the cookie recipe wasn’t going to fly, I had to come up with a plan B. The fridge was looking pretty empty except for a lone baked sweet potato and a few other staples. That’s when the idea for this recipe struck me. I’d made similar smoothies with canned pumpkin – why not try it with sweet potato?
Sweet Potato Pie Smoothie
As a general rule I try to include some kind of green veggie and a source of protein in the form of nuts or seeds whenever I make a smoothie. I ultimately settled on this winning combo:
- Frozen broccoli florets add green without overpowering the taste.
- Chia seeds add protein and act as a thickener.
- Medjool dates pump up the sweetness of the sweet potatoes.
- Pumpkin pie spice adds the yummy spicy flavor we associate with sweet potato pie.
You won’t believe how closely the taste of this smoothie resembles sweet potato pie in liquid form! It’s oh so satisfying, yet it's made entirely with healthy ingredients! If you feel like being decadent, you can always add a dollop of whipped coconut cream on top!
I’ve never made actual sweet potato pie. For fun, I searched for a gluten-free dairy-free recipe. Gluten-free Goddess shares a tasty looking recipe. But it looks like a lot more work than making a smoothie!
Sweet Potato Pie Smoothie
Ingredients
- 1 ½ cups plant milk I use fortified rice milk
- 1 sweet potato small, baked, skin removed (I like to keep baked sweet potatoes on hand to quickly add to recipes like this)
- 1 cup frozen broccoli florets
- ½ Tbsp. chia seeds
- 2 medjool dates pitted
- ½ tsp. pumpkin pie spice
Instructions
- Place ingredients in a high-speed blender in the order they are listed.
- Begin blending on lowest setting and slowly turn up to highest setting.
- Blend on high for approximately 30 seconds.
- Serve immediately.
