Preheat oven 400ºF (I use my convection toaster oven. If you are using a conventional oven you may need to adjust baking time.)
Line a baking sheet with parchment paper.
Scrub sweet potato and pat dry. Use a sharp knife to slice into 1/2 inch thick fries. (Leave skin on.)
Add sweet curry powder, olive oil, sea salt, and fries to a 1-gallon plastic bag. Twist the top closed and shake and massage ingredients until sweet potatoes are evenly coated.
Arrange sweet potatoes in a single layer on parchment-lined baking sheet.
Bake sweet potatoes for 15 minutes, turn and continue baking for another 15 minutes or until potatoes are cooked through.
