New Year's Superfood Smoothie {vegan & gluten-free}

This recipe is loaded with six super foods. Avocado and dates thicken and sweeten in the place of banana.

Ingredients

  • cups almond milk
  • ¼ avocado peeled
  • ½ cup baby kale or other dark leafy green
  • ¼ cup chopped walnuts
  • 1 cup frozen wild blueberries
  • 1-2 medjool dates pitted
  • ¼ tsp. ground ginger to taste

Instructions

  • Place ingredients in a high-speed blender in the order they are listed.
  • Begin blending on lowest setting and slowly turn up to highest setting.
  • Blend on high for approximately 35-40 seconds.
  • Serve immediately.
